This rock salt is preserved in its original state by the rock layer of the Alpine mountain range. It has come from a primitive sea, that dried up 250 million years ago, during a major geological shift. These crystals, varying in colour from pink to brown and orange, are evocative of minerals. Its flavour is direct and pure without being harsh, and is highly enjoyable, with a long full taste in the mouth. This salt will work equally well with meat or with oily fish, baked fish or tomato-based sauces, but also for more delicate uses with raw vegetables and fromage frais dips.
